Vegetable Saute With Shiitake Mushrooms

Ingredients Yields 4 servings

3 oz baby spinach (about 2 cups)
4 oz baby carrots (about 1 cup)
3 oz shiitake mushrooms (about 1 cup)

Instructions

    Heat a large skillet over medium heat and add 1 tablespoons of olive oil. Add the spinach and saute until just wilted, 1-2 minutes. Transfer to a bowl. (Do not wipe out the skillet.)

    Add the remaining 1 tablespoon of oil to the skillet. Add the carrots and sauté 2 minutes. Add the mushrooms and zucchini and saute 5 minutes.

    Stir in the peas, lemon juice, and herbs de Provence and season with salt and pepper. Saute 2 minutes. Return the cooked spinach to the skillet and warm 1 minute.
