    Mash the potatoes until light and fluffy. Add the pumpkin and mix with clean hands, incorporating until the mixture is light orange, without any marbling. Add the flour and mix with your hands, stopping once incorporated.

    Fill a medium-sized pot with water, add a dash of seasoned salt and bring it to a boil. Split the dough into 4 and roll each section into a long, thin cylinder 3/4 inch in diameter. Cut into 1 inch segments and roll over the back of a fork to get the signature gnocchi ridges.

    Once the water has come to a boil, gently drop the gnocchi into the water and lower the heat to a simmer. When the gnocchi rise to the top, carefully remove them with a slotted spoon and place on an oven-safe plate. Keep warm in the oven until ready to serve.
