    Heat olive oil in a large nonstick skillet over a medium high heat.

    Add onion and ginger and cook for 3-5 minutes until onion is soft and translucent. Add garlic and cook an additional minute.

    Add turkey and cook 7-10 minutes, until no longer pink. Using the back of your spatula, break up ground turkey into crumbles.

    Stir in hoisin sauce and soy sauce and allow to cook for 1 minute. Remove pan from heat and add pepper to taste.

    Create lettuce cups with 1 to 2 lettuce leaves, spoon turkey into lettuce cups, sprinkle with shredded carrots, and enjoy.
