    Preheat the oven to 425F. Warm the oil in an oven-safe frying pan on the stove and tilt to coat the bottom of the pan.

    Whisk the eggs in a medium bowl and add vegetables, salt and pepper.

    Crumble and add the gouda, stirring until incorporated. Pour this mixture into the warm pan and allow to cook until the sides begin to bubble and set.

    The center will still be a little bit loose. Bake in the oven until golden brown and firm in the center.
