    Peel the cucumber and cut it in half lengthwise.

    Cut each half into thirds lengthwise and then chop into bite-sized pieces.

    Finely dice the tomatoes and roughly chop the artichoke hearts. In a large bowl, toss the cucumber slices, kalamata olives, artichoke hearts, tomatoes and feta cheese together. Dress with olive oil, vinegar, salt and black pepper.
