    For the yogurt combine the yogurt, garlic, lemon juice, and parsley in a bowl and season with salt and pepper. Cover and refrigerate at least 30 minutes. You can make this a day in advance to save time.

    For the pitas combine the tomatoes, spinach, cucumber, onion, and olives in a large bowl and drizzle with 1 teaspoon of olive oil. Season with salt and pepper and stir to combine.

    Heat a grill pan (or cast-iron skillet) over medium-high heat and brush with the remaining 2 teaspoon of oil. Season the chicken with salt and pepper and grill until golden brown and just cooked through, 6-7 minutes per side, depending on thickness.
