In a small saucepan, bring the brown rice, water and 1 tsp olive oil to a boil. Reduce to a simmer and cover. Simmer for half an hour or until cooked through.
Warm 2 tsp olive oil in a frying pan. Soften the onions in the oil with the ginger and chili flakes. Add the cashews, pineapple and brown rice. Make a hole in the middle of the rice and add the last 1 Tbs of olive oil in the middle.
Crack the 2 eggs into the oil and stir occasionally until cooked. Mix the fried egg into the rice and remove the pan from the heat. Add the soy sauce and vinegar and incorporate. Salt to taste and serve warm.
