    Preheat oven to 400° F.

    In a bowl mix sugar, salt and paprika.

    Squeeze lime over both fillets, then spread the seasoning over both fillets. Let sit for at least 5 minutes.

    In a frying pan add bacon grease (or cook 1 slice of bacon and leave grease).

    Over medium heat add fillets skin side up. Sauté for 2 and a half minutes, flip then sauté for another 2 and a half minutes.

    Finally add fish to a foiled pan and cook for an additional 8-10 minutes in the oven.
