    Preheat oven to 350° F and grease a muffin tin with coconut oil.

    In a large bowl, sift dry ingredients until blended.

    In a medium bowl, mash bananas with the back of a mixing spoon. Add remaining wet ingredients and mix to combine.

    Add the wet ingredients into the large bowl, and mix all ingredients until smooth. It should be a thick, batter consistency.

    Spoon about a ΒΌ cup of the batter into eat muffin cup. Sprinkle the tops with crushed walnuts or oats.

    Bake at 350° F for 20-25 minutes, or until a toothpick comes out clean.
